Da un unico vigneto situato a Tufo, in frazione San Paolo, viene vinificato il solo mosto fiore che riposa poi sulle fecce fini per 9 mesi così da dare una maggiore complessità olfattiva che si esprime su note iodate e di pietra focaia, e poi nella freschezza di note erbacee, di timo e di macchia mediterranea. E quella stessa complessità sa regalare, poi, anche una maggiore struttura gustativa in un finale di lunga persistenza. E’ l’azienda storica della denominazione, nata ufficialmente nel 1833, ma con radici ben più lontane. La leggenda narra che fu proprio Scipione Di Marzo nel 1647 a portare l’uva Greco a Tufo.
